Ingredients
🍖 500g Beef tripe, bucho de boi
🌱 300g White beans, feijão branco, soaked overnight
🌭 3 Thin sausages, linguiças fininhas
🍅 1 Diced tomato, ripe and seedless
🧅 1 Diced onion
🌶️ ½ Diced green bell pepper
🍅 3 tablespoons Homemade tomato sauce
🧄 3 cloves Minced garlic
🥄 2 tablespoons Oil
🌿 Fresh herbs, cheiro verde: chives and cilantro/parsley
🧂 Salt
🌶️ Smoked paprika
🌶️ Hot paprika
🌶️ Annatto powder
🍃 Chimichurri
🫒 Green olives, for decoration
🌶️ 1 Finger pepper, pimenta dedo de moça, diced for cooking, whole for decoration
🍋 Vinegar or juice of one lemon, for cleaning tripe
🍃 2 Bay leaves, for tripe and beans
🌿 Parsley or chive stalks, a few, for cooking beans
Instructions
1- Prepare Ingredients:
- Soak 300g of white beans overnight.
- Clean the tripe by removing fat and cutting into smaller pieces if necessary. Use vinegar or lemon juice with bay leaves and water to boil tripe twice for 10 minutes each, draining in between.
- Slice sausages, dice the tomato, onion, bell pepper, and mince garlic.
2- Cook White Beans:
- In a pot, add beans, few bay leaves, parsley or chive stalks, salt, and water. Cook for 20 minutes until tender.
3- Cook Dobradinha:
- Heat oil in a pressure cooker. Brown sausages, then add garlic until fragrant.
- Add onion and bell pepper, sauté until softened. Stir in tomato, spices (smoked/hot paprika, chimichurri, salt, annatto powder), and mix.
- Add tripe and tomato sauce. If desired, add diced finger pepper.
- Cover ingredients with hot water, close the cooker, and cook on high pressure for 25 minutes.
4- Final Assembly and Simmer:
- Release pressure, add pre-cooked beans, stir, and simmer for 10-15 minutes.
- Adjust seasonings and garnish with chopped herbs before serving.
