Instructions:

3. Place the mashed potatoes in a mixing bowl. Add the potato starch to the bowl along with the tablespoon of butter and the egg yolk.
4. Season the mixture with freshly grated nutmeg and a pinch of salt to taste.
5. Gently fold the ingredients together until you have a smooth potato dough. Avoid over-mixing, which can make the dumplings too hard.
6. Wet your hands slightly to prevent sticking and shape the potato mixture into dumplings. The size of each dumpling is entirely up to you, although they are traditionally quite large.
7. Optionally, you can create a hollow in the dumplings and fill them with a filling of your choice, such as sautéed mushrooms with onions and butter.
8. Bring a pot of lightly salted water to a simmer (do not boil it vigorously). Carefully place the dumplings in the water.
9. Cook the dumplings until they float to the surface. This should take approximately 10-15 minutes, depending on the size of the dumplings.
10. Once cooked, remove the dumplings with a slotted spoon.
11. In a small pan, melt some additional butter and add the finely chopped fresh parsley to make a parsley butter sauce.
