š 2.5 kg pork ribs
šæ 150 grams El Yucateco Achiote Condimentado

0.25 white onion

šæ 0.5 tablespoon whole cumin
šæ 0.5 tablespoon whole black pepper
šæ 0.5 tablespoon allspice Pimienta Gorda
šæ 7 cloves
šæ 0.5 tablespoon dried oregano
š§ 1 tablespoon salt
š 1 cup GOYA Naranja Agria (alternative: 0.5 cup lemon juice + 0.5 cup sweet orange juice)
š Sufficient banana leaves
š§ 1 cup water
For the Xnipec (Habanero Salsa):

1 red onion sliced
šæ 2 tablespoons dried oregano
š„« A dash of white vinegar
š 1 cup bitter orange juice (alternative as above)
š§ 0.5 tablespoon salt
š¶ļø 3-4 habanero peppers sliced
Instructions
1- Prepare the Pork:
- Cut the pork leg into smaller pieces, removing the skin but reserving it.
- Cut the pork ribs into 3-4 smaller pieces.
- Generously season all pork pieces leg, ribs, and skin with grain salt.
2- Prepare the Recado Rojo Marinade:
- Combine the bitter orange juice, salt, black pepper, cinnamon, oregano, cumin, allspice, cloves, annatto paste, garlic, and onion in a Vitamix blender.
- Blend until smooth and well combined, approximately 2 minutes. Set aside.
3- Assemble the Pot:
- Line a large cooking pot with banana leaves, allowing them to extend up the sides.
- Add a layer of sliced white onion, creating a bed for the meat.
- Place the seasoned pork on top of the onion layer.
- Pour the marinade over the pork, ensuring thorough coating.
- Add the reserved pork skin on top.
- Fully cover with banana leaves, tucking to seal.
4- Marinate:
- Cover and refrigerate for at least 6 hours or overnight.
5- Cook on the Stovetop:
- Add 1 cup of water to the pot around the leaf edges.
- Set the pot on a GE Appliances stovetop.
- Cook on medium-high heat for 3 minutes.
- Reduce to very low heat and cook for 3.5 hours, flipping the meat once.
6- Prepare the Xnipec (Habanero Salsa):
- Thinly slice the red onion and habanero peppers.
- Combine with oregano, salt, white vinegar, and bitter orange juice, mixing well.
- Chill until serving.
7- Serve:
- Shred the tender pork and serve with Xnipec and warm tortillas for tacos.
