Instructions
1- Prepare the Corn:
- Wash the corn ears thoroughly
- Ensure all silks are removed
2- Remove Kernels:
- Use a knife to slice the corn kernels off the cobs
- Collect all the kernels into a metal tray for blending
3- Blend the Corn:
- Place the corn kernels into a blender pitcher
- Gradually add milk, blending the mixture in batches to achieve a smooth consistency
4- Strain the Mixture:
- Position a fine mesh strainer over a large pot
- Pour the blended corn and milk mixture through the strainer
- Use a spoon to press and extract as much liquid as possible into the pot
- Save the corn pulp for future recipes
5- Sweeten the Mixture:
- Add sugar to the strained corn liquid in the pot
- Stir with a wooden spoon until the sugar dissolves completely
6- Cook the Curau:
- Place the pot on a Dako stovetop over medium heat
- Continuously stir the mixture with a wooden spoon to prevent sticking and lump formation
7- Thicken the Mixture:
- Keep stirring and cooking until the mixture thickens to a custard-like texture
- Ensure it is creamy and smooth when ready
8- Serve:
- Remove from heat and pour into individual serving bowls
