Instructions
1- Prepare the Saltfish:
- Soak the salted cod fish in cold water overnight to remove excess salt. Change the water a couple of times during soaking.
- The next day, drain and rinse the fish. Place the saltfish in a pot of water and bring to a boil; cook for about 15 minutes, then drain. Flake the fish into pieces and set aside.
2- Make the Cassava Dumplings:
- In a large mixing bowl, combine the cassava flour and salt.
- Gradually add water to the flour mixture, kneading until a smooth dough forms.
- Divide the dough into small pieces and roll each piece into a ball. Flatten each ball slightly to form dumplings.
3- Cook the Dumplings:
- Bring a large pot of salted water to a boil. Add the dumplings and cook for about 15-20 minutes or until they float to the surface and are cooked through. Remove and set aside.
4- Saltfish and Beans Preparation:
- In a large skillet or pan, heat the vegetable oil over medium heat. Add garlic and onion, sautΓ© until fragrant.
- Add Scotch Bonnet pepper, green bell pepper, tomatoes, and thyme; cook until vegetables are soft.
- Stir in the flaked saltfish, mixing well with the vegetables. Cook for a few minutes.
- Add the kidney beans and coconut milk, stirring to combine. Allow the mixture to simmer for about 10 minutes, stirring occasionally.
- Add butter, salt, and pepper to taste.
5- Serving:
- Serve the cassava dumplings alongside the saltfish and beans mixture. Enjoy your island-style meal!
