Qorma e Lubia is a comforting and flavorful Afghan stew that embodies the rich spices and textures typical of Middle Eastern cuisine. This vegan recipe is straightforward yet soulful, with tender kidney beans simmered in aromatic spices, making it a hearty dish perfect for any occasion.
Ingredients
š« 250g cooked kidney beans, dry weight
šæ 1 tsp cumin seeds
šæ 1 tsp coriander seeds
š¶ļø 1 tsp paprika powder
š 1/4 tsp turmeric powder

1 onion
š§ 4 cloves of garlic
š„ 1 tsp ginger
š
200g tomatoes
š„« 1 tbsp tomato paste
š« 3-4 tbsp olive oil
š§ 1 tsp salt
š§ 500ml water or broth
Instructions
1- Grind Spices:
- Coarsely grind the cumin seeds and coriander seeds using a mortar and pestle.
- Set aside.
2- Heat Oil:
- In a Tefal pan, heat 3-4 tablespoons of olive oil over medium heat.
3- Bloom Spices:
- Add the ground cumin and coriander seeds to the hot oil.
- Fry briefly to release their aromas.
4- Cook Onions:
- Add the chopped onion to the pan.
- Cook for about 8 minutes until soft and golden.
5- Garlic and Ginger:
- Introduce sliced garlic and grated ginger into the pan.
- Fry for an additional 5 minutes.
6- Tomatoes:
- Add chopped tomatoes.
- Fry for about 12 minutes, allowing them to break down into a sauce.
7- Spice it Up:
- Stir in the tomato paste, paprika powder, and turmeric.
- Mix well and cook for 5 minutes.
8- Simmer Stew:
- Add the cooked kidney beans, along with 500ml of water or broth and 1 tsp of salt.
- Stir thoroughly.
9- Cover & Simmer:
- Cover with a lid and let simmer on low for 15-20 minutes.
10- Mash Beans:
- Remove the lid and mash some kidney beans with a wooden spatula to thicken the stew.
11- Final Simmer:
- Mix everything again and let simmer for a few more minutes until desired consistency is achieved.
12- Serve:
- Garnish with fresh parsley and serve hot, ideally with Afghan bread or rice.
