Ingredients
🥔 500g Asterix potatoes, cooked with skin
🧂 5g salt
🥄 10g sugar
🧂 30ml alcohol vinegar
🌶️ A pinch of sweet paprika
🌶️ A pinch of fresh black pepper
🍲 300ml beef broth
🥒 3 units Zilse pickled cucumbers, diced
🧅 2 onions
🥓 150g smoked bacon
🫒 50ml olive oil
🥄 1 teaspoon German mustard
🥒 50ml pickle juice
🌿 Fresh chives, for finishing
🌿 Fresh parsley, for finishing
Instructions
1- Prepare the Potatoes:
- Boil 500 grams of Asterix potatoes in their skins with a pinch of salt for about 40 minutes until well cooked yet firm.
- Let the potatoes cool slightly, then peel. The skin should come off easily.
- Dice the peeled potatoes into small cubes, ensuring each piece is just the right size for a fork. Set aside.
2- Make the German Vinaigrette:
- Mix 5 grams of salt and 10 grams of sugar in a bowl.
- Add 30 ml of alcohol vinegar and stir for about 5 minutes until dissolved.
- Mix in a pinch of sweet paprika, a pinch of fresh black pepper, and half of 300 ml beef broth.
- Add 3 diced Zilse pickled cucumbers with some liquid.
3- Cook the Onion and Bacon:
- Finely cube 2 onions and 150 grams of smoked bacon.
- Sauté both in a pan with 50 ml olive oil until they are golden brown and crispy.
4- Assemble the Salad:
- Combine the potatoes, vinaigrette, and sautéed bacon/onion in a large bowl.
- Add 1 teaspoon German mustard and 50 ml pickle juice.
- Gradually mix in more beef broth to reach the desired consistency.
- Stir slowly, slightly mashing some potato cubes to produce a creamier sauce.
5- Finalize:
- Taste and adjust seasoning with salt and pepper if needed.
- Finely chop fresh chives and parsley; incorporate into the salad.
