Ingredients
🎃 2 pounds pumpkin, peeled and cut into chunks
🧅 2 medium onions, sliced
🧄 3 fresh garlic cloves, grated

Instructions
1- Prepare the Sauce:
- Heat cooking oil in a non-stick frying pan over medium heat.
- Sauté the sliced onions until soft and translucent, approximately 2 minutes.
- Add chopped tomatoes to the pan with the onions.
- Mix in turmeric powder and stir to combine.
- Cook for 5 minutes until the tomatoes have reduced.
2- Add Aromatics and Spice:
- Grate fresh garlic cloves directly into the pan.
- Incorporate the chopped fresh green chilis and continue to cook for another 3 minutes until the sauce is slightly dry.
- Season with salt.
3- Cook the Pumpkin:
- Add peeled and chunked pumpkin pieces to the pan, ensuring each piece is well-coated.
- Fry the pumpkin with the sauce for 5 minutes, stirring occasionally.
- Pour 1/2 cup of water into the pan.
- Cover with a lid and allow to simmer for 10 minutes until pumpkin is soft.
4- Prepare the Yogurt Sauce:
- In a mixing bowl, combine yogurt with grated garlic cloves. Mix well.
5- Plate and Garnish:
- Spread a layer of the garlic-infused yogurt on a decorative platter.
- Arrange the cooked pumpkin pieces on top.
- Drizzle any remaining sauce from the pan over the pumpkin.
- Spoon more yogurt over the pumpkin.
- Garnish with fresh tomato slices, fresh green chili slices, a sprinkle of dried mint, dried red chili powder, and fresh cilantro sprigs.
