š¾ 4 sachets Fleischmann's RapidRise Yeast

š§ Warm water
š Cajeta de Camote con Piloncillo (Sweet Potato Paste)
š§ Philadelphia Cream Cheese
Instructions
1- Prepare the Dry Ingredients:
- In a large wooden mixing bowl, combine flour, sugar, Morton salt, and Fleischmann's yeast.
- Mix thoroughly by hand until well combined.
2- Knead the Dough (First Stage):
- Gradually add warm water to the dry mixture while continuously kneading.
- Ensure the dough is not too wet.
- Knead until the dough starts to cleanly separate from your hands.
3- Incorporate Lard:
- Make a space in the dough and add the lard.
- Cream it into the dough, kneading vigorously until fully incorporated.
- The dough should be smooth, elastic, and slightly bubbly.
4- Portion the Dough:
- Transfer dough to a floured surface and divide it into small, medium-sized balls (testales).
5- First Rise:
- Cover the dough balls with a plastic bag followed by a kitchen towel.
- Let them rise in a warm place for about 10 minutes.
6- Form Empanadas/Bread:
For Empanadas:
- Flatten a dough ball using a rolling pin.
- Fill one half with sweet potato paste.
- Fold to create a crescent. Seal with a zig-zag cutter tool.
For Round Bread:
- Flatten by hand. For a creamy variation, add cream cheese before sealing.
