Ingredients
Green Garlic Mojo
š§ ~3-4 stalks ~1 cup chopped green garlic
š« ~1 cup olive oil Baja's Finest
š§ ~1/2 teaspoon salt
š ~1 tablespoon lime juice from fresh lime
šæ ~1 teaspoon fresh chopped epazote
šæ ~1 teaspoon fresh chopped lemon thyme
Arbol Salsa
š¶ļø ~1/2 cup dried arbol chilies
š
~5-6 medium Roma tomatoes
š§ ~4-5 garlic cloves
š§ ~1/4 to 1/2 cup water
š§ ~1/2 teaspoon salt
Tacos
š„¬ ~8-10 cups mixed garden greens e.g., Tuscan kale, spinach, Swiss chard, chopped
š§ ~2-3 tablespoons crumbled Mexican fresh cheese queso fresco
šø ~1-2 tablespoons daikon blossoms for garnish
š½ ~12-16 small fresh corn tortillas
Instructions
1- Prepare Green Garlic Mojo:
- Wash and trim the green garlic, splitting it end-to-end, then slice thinly.
- In a small saucepan, combine the garlic with olive oil and salt.
2- Cook Garlic:
- Cook over very low heat until tender approximately 15 minutes.
- Add lime juice, epazote, and lemon thyme. Cook for another 10 minutes. Set aside.
3- Prepare Arbol Salsa:
- Dry-roast the arbol chilies in a small skillet over medium heat until fragrant, around 2-3 minutes.
- Roast the Roma tomatoes until blackened and soft.
4- Roast Garlic:
- Dry-roast garlic cloves in the skillet until soft, then peel.
- Blend the chilies, tomatoes, and garlic until smooth, adding water for desired consistency and salt to taste.
5- Cook Garden Greens & Assemble Tacos:
- Wash and chop the garden greens into bite-sized pieces.
- Heat a large skillet with a couple of tablespoons of the green garlic mojo oil without solids. Add greens and a splash of water. Cook until tender, 8-10 minutes.
6- Assemble:
- Place the cooked greens onto warm corn tortillas, drizzle with the mojo and arbol salsa, and garnish with crumbled queso fresco and daikon blossoms. Serve immediately.
