Ingredients
🦐 1 lb fresh mixed shellfish such as clams, mussels, scallops
🐟 1 lb white fish fillets such as cod or sea bass, cubed
🧄 3 cloves of garlic, minced
🍋 1 large lemon, juiced
🌿 1 tablespoon fresh cilantro, chopped
🌶️ 1 red chili pepper, finely chopped
🧅 1 medium red onion, finely diced
🥑 1 ripe avocado, diced
🥤 1 cup tomato juice e.g., Campbell's Tomato Juice
🧂 Salt
🫒 1 tablespoon olive oil e.g., Colavita Extra Virgin Olive Oil
🍾 Optional: 1/2 cup dry white wine e.g., Sauvignon Blanc
Instructions
1- Prepare the Seafood:
- Clean and debeard the shellfish if necessary.
- Rinse the fish fillets under cold water and pat dry with paper towels. Cut into bite-sized cubes.
2- Marinate:
- In a large glass or ceramic bowl, combine the seafood, garlic, lemon juice, cilantro, chili pepper, and a pinch of salt. If using, add white wine.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
3- Cook:
- In a large skillet e.g., T-fal Ultimate Hard Anodized Nonstick, heat the olive oil over medium heat. Add the onion and sauté until translucent, about 5 minutes.
- Increase the heat to medium-high and add the marinated seafood mixture. Cook until the shellfish open and the fish is opaque, about 8-10 minutes. Discard any shellfish that do not open.
4- Finish:
- Remove from heat and stir in the tomato juice. Let it sit for 5 minutes to absorb the flavors.
- Gently fold in the avocado cubes.
5- Serve:
- Ladle the Mariscal into bowls and serve immediately, garnished with additional cilantro if desired.
