Ingredients
🥜 1 cup raw peanuts, skinned and unsalted
🥔 1 large potato, peeled and diced
🥕 1 large carrot, peeled and diced
🧅 1 medium onion, finely chopped
🌽 1 cup corn kernels, fresh, frozen, or canned
🍗 1 pound chicken breast, cut into cubes
🍲 6 cups chicken broth, Swanson® Chicken Broth recommended
🧂 Salt, to taste
🧄 2 cloves garlic, minced
🌿 1 tablespoon fresh parsley, chopped
🌿 1 tablespoon fresh cilantro, chopped
🌶️ 1 teaspoon ground chili powder, McCormick® Chili Powder
🥄 2 tablespoons vegetable oil, Mazola® Corn Oil
Instructions
1- Prep the Peanuts:
- In a blender or food processor, grind the raw peanuts until they form a smooth paste. Set aside.
2- Cook the Chicken:
- Heat 1 tablespoon of Mazola® Corn Oil in a large pot over medium heat.
- Add the chicken cubes and cook until they are browned on all sides. Remove the chicken and set aside.
3- Prepare the Base:
- In the same pot, add the remaining oil, onions, and garlic. Sauté until the onions are translucent.
- Add the diced carrot and potato; cook for about 5 minutes.
4- Combine the Ingredients:
- Return the chicken to the pot. Stir in the peanut paste, chicken broth, and chili powder.
- Simmer over low heat, stirring occasionally, for about 20-25 minutes or until the vegetables are tender.
5- Final Touches:
- Add the corn and simmer for another 5 minutes.
- Season with salt to taste. Stir in chopped parsley and cilantro before serving.
6- Serve:
- Ladle the soup into bowls and garnish with additional chopped parsley or cilantro if desired.
