Ingredients:
- 4 haddock fillets
- Jasmine rice (for serving)
- 1/4 cup grated Parmesan cheese
- 2 tablespoons garlic seasoning blend (preferably Wild Tree's Garlic Galore)
- 3 tablespoons olive oil, divided
- 2 tablespoons freshly squeezed lemon juice
- 2 teaspoons melted clarified butter, divided
- 1/4 cup parsley flakes, divided
- 15 Ritz crackers
- Himalayan pink salt, to taste
- Freshly ground black pepper, to taste
Instructions:
1. Preheat your oven to 350 degrees F (175 degrees C).
2. Place the haddock fillets into individual ramekins.
3. Drizzle fillets with lemon juice and set aside.
4. Crush the Ritz crackers inside a Ziploc bag until you achieve a coarse texture.
5. To the crushed crackers, add half of the parsley (about 1/8 cup), 1/8 cup Parmesan cheese, 1 tablespoon garlic seasoning, a dash of pink salt, and black pepper to taste.
6. Add 2 tablespoons of olive oil and 1 teaspoon of the melted clarified butter to the mixture in the bag. Seal and shake the bag to combine the ingredients, making sure the mixture is moist - add an extra tablespoon of olive oil and clarified butter if it’s too dry.
7. Distribize the cracker mixture evenly over the four haddock fillets.
8. Drizzle the remaining olive oil and clarified butter over the topping.
9. Bake in the preheated oven until the fish flakes easily with a fork and the topping is golden brown, about 20-25 minutes.
10. While the fish is baking, prepare jasmine rice according to package instructions.
