Ingredients
🫒 Sufficient Olive Oil for sautéing, generic, clear glass bottle
🧅 1 small onion, finely chopped
🧄 2 cloves of garlic, minced
🍃 1 bay leaf
🌶️ 1 small piri-piri, finely chopped
🍅 5 tablespoons tomato puree/pulp
🐟 1 Tilapia fillet, cut into pieces
🦐 Approx. 150-200g each Seafood Mix of mussels, small shrimp, and squid rings, shelled
🦪 Approx. 200-300g Mussels in shells
🧂 Salt
🍚 1/3 to 1/2 cup short-grain white rice
🍷 1/4 cup white wine
🧂 A sprinkle of Red Pepper Powder "Pimentão Doce" by "A Pimentinha"
🌿 A generous bunch of parsley
🐟 2 fish stock cubes by "Knorr" mixed with 2-3 cups water
Instructions
1- Heat the Pot:
- Place a black cast iron pot on a "Gorenje" induction hob and set the heat to medium.
2- Sauté Aromatics:
- Add olive oil to the preheated pot.
- Add chopped onions, minced garlic, chopped piri-piri, and bay leaf.
- Sauté until onions are translucent.
3- Incorporate Tomato Puree:
- Stir in the tomato puree with the aromatics.
4- Add Seafood Mix:
- Add tilapia pieces, squid rings, and shelled mussels and shrimp.
- Stir to incorporate.

- Place the mussels with shells into the pot.
7- Add Rice:
- Sprinkle rice over the existing ingredients.
8- Enhance with Wine and Spices:
- Add the white wine followed by a sprinkle of red pepper powder.

- Pour in the fish stock mixture.
10- Simmer the Stew:
- Stir gently, reduce heat, and let it simmer until rice is al dente, achieving a soupy consistency.
- Taste and adjust salt before serving.
