Sweet Antiguan Ducana Delight

Ingredients

๐ 1 cup grated sweet potato, preferably purple-skinned sweet potato
๐ฅ 1 small carrot, grated, optional
๐ฟ 2-inch piece grated ginger

๐ 1 cup plain flour
๐ฆ 1 teaspoon vanilla essence, Madagascar Vanilla
๐ 1/2 teaspoon cinnamon
๐ฅ 1/2 teaspoon nutmeg
๐ง 1/4 cup water for mixing
๐ฟ Banana leaves or aluminum foil for wrapping
๐งถ String for tying
๐ฆ 1-2 cups water for boiling
Instructions
1- Prepare Banana Leaves:
- Rinse the banana leaves under water.
- Pour hot water over them to make them pliable for wrapping.
2- Combine Ingredients:
- In the large wooden mixing bowl, combine grated coconut, grated sweet potato, optional grated carrot, grated ginger, white sugar, plain flour, vanilla essence, cinnamon, and nutmeg.
3- Mix Batter:
- Use the spatula to mix the ingredients thoroughly.
- Gradually add water until a thick, consistent batter is formed.
4- Wrap the Ducana:
- Lay a banana leaf on a clean surface.
- Place a generous dollop of the batter in the center.
- Fold sides over the mixture.
- Secure with string to create a sealed, rectangular packet.
5- Steam the Packets:
- Place the wrapped ducana packets in the non-stick pan.
- Add water for steaming, ensuring not to submerge the packets.
- Cover with the glass lid.
6- Cook:
- Steam the packets over medium heat for 25-30 minutes.
7- Cool and Serve:
- Allow the ducana packets to cool before unwrapping to avoid burns.
- Serve the smooth, fragrant pudding-like dessert as is or with your favorite garnish.
