π 2 small bay leaves

π§ 1/2 teaspoon Morton Iodized Salt plus additional for seasoning
πΏ 1/2 teaspoon ground cumin
π 1 teaspoon dried Mexican oregano
π₯ 2 tablespoons H-E-B Avocado Oil
π― Pre-made refried beans 1 cup
Instructions
1- Cook the Beef:
- Cut the beef skirt into medium pieces and place in the Instant Pot.
- Add bay leaves, a quarter onion, and 1 garlic clove.
- Cover with water, add 1/2 teaspoon of salt, and cook on high for 30 minutes.
- If using a stovetop, simmer for at least 2 hours until tender.
- Let cool, shred using two forks, and reserve the broth.
2- Prepare the Sauce Base:
- Clean guajillo chiles by removing seeds/veins, toast on a hot skillet, then soak in boiling water until soft.
- Roast garlic, tomatoes, and a quarter onion on a hot skillet until charred.
- Remove the roasted vegetables as they finish.
3- Blend the Sauce:
- Combine rehydrated chiles, garlic, onion, tomatoes in a blender.
- Add 1/2 teaspoon of salt and a bit of reserved broth for smooth blending.
- Blend until smooth.
4- Cook the Shredded Beef with Sauce:
- Heat avocado oil in a pot over medium heat, add shredded beef, and fry for 2 minutes.
- Pour the blended sauce over the beef, mix well; thin with broth if needed.
- Add cumin and crushed oregano, simmer for 5 minutes; adjust salt as needed.
5- Warm the Tortillas:
- Heat a skillet, warm each tortilla until flexible.
6- Assemble the Burritos:
- Place a tortilla on a silicon mat, spread refried beans on one side.
- Add shredded beef mixture, fold edges, and roll upward tightly.
7- Toast the Burritos:
