Instructions
1- Preparation:
- Clean and cut 1 kg of chicken into pieces.
- Place the chicken in a large mixing bowl.
- Squeeze the juice of 1/2 to 1 lemon over the chicken.
- Add homemade seasoning comprising peppers, garlic, chicken broth cube, and parsley flakes. Mix everything thoroughly to coat the chicken evenly.
2- Marinate:
- Cover the seasoned chicken and let it marinate for about 30 minutes to an hour to absorb the flavors deeply.
3- Frying:
- Heat a generous amount of cooking oil in a stainless steel frying pan over medium-high heat.
- Fry the marinated chicken pieces in batches until golden brown, approximately 5-7 minutes per side. Remove the fried chicken and set aside.
4- Sauce Preparation:
- In a separate stainless steel pot with a glass lid, heat some cooking oil.
- Sauté the diced onion until softened.
- Add the diced tomatoes and cook until they start breaking down.
- Stir in the diced orange and green bell peppers, cooking until slightly softened.
- Add the tomato sauce or puree to the vegetables, stirring to combine.
- Place the bay leaf in the pot and pour water just enough to cover the chicken later.
5- Simmering:
- Bring the sauce to a simmer before adding the fried chicken pieces.
- Season with salt to taste, cover the pot, and let the chicken stew for 45 minutes, stirring occasionally to prevent sticking and to ensure even cooking.
