This robust chickpea stew is cooked in a spicy tomato-based sauce and finished with fresh garnishes. Ingredients
🌿 2-3 cups cooked chickpeas, prepared from dry chickpeas
🧂 0.5 packet baking powder
🌶️ 4-5 pieces dried red peppers
🍅 1-2 medium fresh tomatoes, for steaming and crushing
🍅 1-2 medium fresh tomatoes, diced for garnish
🌶️ 1-2 green hot peppers, diced for garnish
🌶️ Whole pickled green peppers, for garnish
🧄 ~2-3 tablespoons garlic, minced
🥄 2 tablespoons olive oil
🍅 2 tablespoons tomato paste
🌿 1/4 cup diced spring onion/parsley, and a sprig for garnish
🌿 2-3 tablespoons ground cumin
🌿 1 tablespoon Ras el Hanout
🌶️ 1-2 teaspoons paprika
🧂 1 teaspoon salt
💧 Water, for soaking, cooking, and simmering sauce
Instructions
1- Prepare Chickpeas:
- Clean and wash dry chickpeas.
- Soak them in water with 0.5 packet of baking powder for at least 10 hours, ideally overnight.
- Drain, rinse, and cook in fresh water in a pressure cooker for about 40 minutes until tender.
2- Prepare Pepper and Tomato Mash:
- Steam dried red peppers and 1-2 fresh tomatoes until very soft.
- Remove pepper stems and peel tomatoes.
- Crush or mash to a smooth paste.
3- Prepare Hot Sauce Base:
- Heat 2 tablespoons of olive oil in a pot.
- Sauté 1 tablespoon garlic and 1 teaspoon paprika until fragrant.
- Stir in tomato paste, sauté briefly, and add water to create a thin sauce. Simmer for a few minutes.
4- Assemble Doubara:
- Mix cooked chickpeas with some cooking liquid in a large bowl.
- Add hot sauce base.
- Incorporate pepper and tomato mash.
- Mix in fresh garlic, cumin, Ras el Hanout, and salt.
- Combine thoroughly to distribute flavors.
5- Serve:
- Serve in a traditional bowl (Qas'a).
- Optionally add more hot sauce.
- Garnish with diced tomatoes and green peppers.
- Top with pickled green peppers and a parsley or dill sprig.
- Drizzle with olive oil before serving.
