Authentic Belarusian Draniki (Potato Pancakes)

Ingredients
🥔 400g Potatoes, peeled
🌾 2 tablespoons Wheat Flour
🥚 1 Chicken Egg
🧂 Salt "Fleur de Sel" brand
🌶️ Freshly ground Black Pepper

🍶 Sour Cream for serving

Instructions
1- Prepare Potatoes:
- Peel and clean the potatoes.
- Immediately immerse them in water to prevent browning.
2- Grate Potatoes:
- Use the smaller side of a box grater.
- Grate the potatoes into a bowl.
3- Drain Potatoes:
- Transfer grated potatoes to a colander over a bowl to drain excess water.
- Allow potato starch to settle at the bottom of the bowl.
- Discard the liquid but return settled starch to grated potatoes.
4- Create Batter:
- Add wheat flour, chicken egg, salt, and freshly ground black pepper to grated potatoes.
- Mix thoroughly with a spoon until well combined.
5- Fry Draniki:
- Heat a frying pan over maximum heat on an AEG induction stovetop.
- Add a generous amount of coconut oil to the pan.
- Spoon portions of potato batter into the hot pan, slightly flattening into pancakes.
- Fry each side for approximately 1-2 minutes or until golden brown and cooked through.
6- Serve:
- Remove draniki from the pan and place on a serving plate.
- Serve immediately with a dollop of sour cream and garnish with fresh basil leaves.
