Ingredients
🦞 4 fresh lobster tails
🧈 2 tablespoons butter
🧅 1 small onion finely diced
🫑 1 green bell pepper finely diced
🍤 1 cup small shrimp (popcorn variety) chopped
🍅 1 small tomato optional finely diced
🌶️ A sprinkle of black pepper
🌶️ A sprinkle of paprika
🍖 A sprinkle of Season All
🍞 1 cup Belizean breadcrumbs
🍈 1 lime cut into wedges for garnish and squeezing
Instructions
1- Prepare the Lobster Tails:
- Split the lobster tails lengthwise, carefully removing the intestines without damaging the meat. Set them aside for grilling.
2- Make the Stuffing:
- Melt the butter in a small pot over a Mabe gas stove burner.
- Add the diced onions, bell peppers, and, if using, tomatoes. Sauté until the vegetables are soft.
- Mix in the chopped shrimp and continue to sauté until they are just cooked.
- Season the mixture with black pepper, paprika, and Season All. Stir thoroughly to combine the flavors.
- Incorporate the breadcrumbs into the sautéed mixture, stirring until you achieve a golden-brown, moist stuffing.
3- Grill the Lobster:
- Preheat your grill (use open coals for a smoky flavor) to medium heat.
- Grill the split lobster tails cut-side down until the shells turn a vibrant orange and the flesh is opaque and cooked through.
4- Assemble the Dish:
- Lavishly spoon the shrimp stuffing over the grilled lobster tails.
- Place them back on the grill briefly to warm and meld the flavors.
