Ingredients:
- 6 large egg yolks
- 150 grams of powdered sugar
- 1 can (12 oz) of evaporated milk
- 250 ml of heavy whipping cream
- 150 ml of brown rum
Equipment:
- Double boiler
- Whisk
- A clean, sterilized bottle (for storage)
- Stove
Instructions:
1. Prep Time: 10 minutes
2. Cook Time: 15 minutes
3. Total Time: 25 minutes
4. Begin by creating a double boiler. Fill a pot with a bit of water and place a heatproof bowl over the pot, ensuring the bottom of the bowl does not touch the water. Bring the water to a simmer over medium heat.
5. Separate the egg yolks from the whites and place the yolks into the bowl of the double boiler.
6. Beat the egg yolks for a couple of minutes until they become a little lighter in color.
7. Add the powdered sugar to the yolks and continue to whisk until the mixture becomes smooth.
8. Gradually pour in the evaporated milk and heavy whipping cream, continuously whisking to combine.
9. Cook the mixture over the double boiler, stirring constantly, until it reaches a creamy consistency. This may take approximately 5 to 10 minutes. Be attentive and ensure the mixture does not come to a boil.
10. Once the mixture is creamy and thick, add the brown rum and stir for an additional 3 to 4 minutes until well incorporated.
11. Remove the heatproof bowl from the double boiler and allow the mixture to cool slightly.
12. Carefully pour the liqueur into the sterilized bottle, leaving about one inch of space from the top.
13. Close the bottle with a lid or cap. The liqueur will thicken as it cools, so if it becomes too thick to pour, simply add a splash of liquid heavy whipping cream or rum and shake well to thin it out.
14. Store your homemade Advocaat liqueur in the refrigerator for up to four weeks.
Servings: Makes approximately 750ml of Advocaat liqueur.
Cooking Tips:
- For a smoother consistency, strain the liqueur through a fine-mesh sieve before bottling.
- Adjust the rum amount based on your preference for a stronger or milder flavor.
