Ingredients:
- 10 digestive biscuits, crushed into crumbs
- 15 pink and white marshmallows, quartered
- 15 glacé cherries, quartered or chopped
- 1 (397 g) can sweetened condensed milk
- Desiccated coconut, for rolling
Instructions:
1. Preparation:
- Place your digestive biscuits in a bag and crush them with a rolling pin or in your hands until you have fine crumbs with a few larger chunks.
- Quarter your marshmallows using a sharp knife or kitchen scissors. If your scissors or knife becomes sticky, dip them in the biscuit crumbs.
- Chop the glacé cherries into similar-sized pieces as the marshmallows.
2. Mixing:
- In a large mixing bowl, combine the crushed digestive biscuits, marshmallow pieces, and chopped cherries.
- Using your hands, mix these ingredients to coat the sticky marshmallows and cherries with the biscuit crumbs. Ensure an even distribution.
3. Combining with Condensed Milk:
- Pour the can of sweetened condensed milk over the mixture.
- Get in with your hands (this will be sticky) and mix everything until it’s thoroughly combined.
4. Shaping:
- Lay out a sheet of baking parchment or greaseproof paper and sprinkle it with desiccated coconut.
- Place half of the mixture onto the paper. Shape it into a log as thick or thin as you prefer.
5. Coating:
- Sprinkle more desiccated coconut over the top of the log.
- Roll the log within the baking parchment, pressing the coconut into the outer layer until the log is fully coated.
6. **Setting the Fifteens:**
- Once shaped, wrap the log tightly in the paper and refrigerate for a few hours to set.
7. **Slicing:**
- Remove the log from the fridge once set. Unwrap and slice it into 15 pieces or however many you prefer.
