š± 1/4 cup freshly chopped cilantro for topping
š¶ 1/2 teaspoon King Arthur All-Purpose Flour for dusting
Instructions
1- Marinate the Meat:
- Use a fork to pierce the flank steak all over to allow better absorption of the marinade.
- Place the meat in a glass baking dish and pour the olive oil and beer over the top.
- Add smoked paprika, kosher salt, garlic powder, and onion powder.
- Mix well, ensuring the meat is completely coated. Cover and marinate in the refrigerator for at least 1 hour.
2- Prepare the Sauce:
- In a pot, rehydrate the dried chilies in beer by simmering on low heat until soft.
- On a baking sheet, char both types of tomatoes using a kitchen torch.
- Transfer the charred tomatoes, garlic cloves, and rehydrated chilies with liquid into a blender.
- Blend until smooth. Set aside in a container.
3- Cook the Meat and Vegetables:
- Remove the meat from the marinade and grill on high heat until charred and cooked through to your preference. Allow the meat to rest and then dice it.
- Grill the fresh green chili peppers until slightly charred. Once cooled, dice them for topping.
4- Assemble the Pizza:
- Dust a wooden board with flour and press out the pizza dough.
- Spread a layer of the charred tomato sauce over the dough.
- Evenly distribute the mozzarella cheese, diced steak, and grilled chili peppers over the pizza.
- Bake in a preheated oven on the recommended setting for your pizza dough until the crust is golden and cheese bubbling.
5- Finish and Serve:
- Top the finished pizza with freshly chopped cilantro and red onions.
- Slice and enjoy with any leftover sauce as a dip.
