Ingredients

2 Guaje tomatoes, diced, seeds removed

1/2 White onion, diced
๐ง 2 cloves Garlic, minced
๐ฟ 1 bunch Epazote leaves, approximately 2 tablespoons, chopped
๐ฎ 12-15 Corn tortillas, preferably day-old
๐ซ 1 tbsp Olive oil + extra for softening, Brand not specified
๐ง Himalayan pink salt
๐ถ๏ธ Black pepper

1 tbsp Tomato paste/puree, Brand: Del Monte
๐ง 2 tbsp Water
๐ง Panela cheese, several slices
Instructions
1- Prepare Huitlacoche Filling:
- Wash the huitlacoche thoroughly in the colander under running water. Remove any small "hairs" or debris. Let drain.
- Heat 1 tablespoon of olive oil in a Tefal non-stick frying pan over medium heat.
- Sautรฉ the diced onion and minced garlic for about 1 minute until they are soft and translucent.
- Add diced tomatoes to the pan; cook for approximately 2 minutes.
- Add the drained huitlacoche. Cook on low flame for 2 minutes, stirring well.
- Incorporate chopped epazote leaves, seasoning with salt and black pepper.
- Optionally add Del Monte tomato paste/puree. Mix thoroughly.
- Pour in water and allow to cook for 4-5 minutes on medium-low flame, stirring occasionally.
- Cover with a lid and cook on low flame for an additional 3 minutes until the filling is thickened. Adjust seasoning if needed. Remove from heat.
2- Assemble Quesadillas:
- In a second Tefal frying pan, heat a small amount of olive oil over medium heat.
- Soften each corn tortilla by placing it in the pan for a few seconds until pliable.
- Spoon a portion of huitlacoche filling onto one half of the tortilla. Top with slices of Panela cheese.
- Fold the tortilla in half and press gently with a spatula.
- Cook until the tortilla is crisp and golden and the cheese has melted, flipping once to ensure even cooking. Remove and serve hot.
