Ingredients
Chaya con Huevo:
🥬 1 large bunch fresh chaya leaves from "mi jardín"
🥚 2 organic eggs from "gallinitas ponedoras bonitas"
🫒 1-2 tablespoons cooking oil
🧂 1/4 - 1/2 teaspoon salt
🌶️ 1 fresh habanero pepper (optional)
Agua de Chaya:
🥬 Remaining chaya leaves from the large bunch
💧 1 liter water
🍋 Lemon
Instructions
Chaya con Huevo:
1- Prepare the Chaya:
- Thoroughly wash and sanitize the chaya leaves using a colander.
- Remove the stems and finely chop the chaya leaves into small pieces.
2- Cook Chaya and Eggs:
- In a non-stick frying pan, heat the cooking oil over medium heat.
- Add the chopped chaya leaves to the hot oil, sautéing them until they soften and their color deepens, about 3-4 minutes.
3- Add Eggs and Season:
- While the chaya is sautéing, beat the eggs in a separate bowl until smooth.
- Pour the beaten eggs into the pan with the softened chaya, stirring continuously.
- Season with salt and continue scrambling the eggs with the chaya until cooked through, about 2-3 minutes.
4- Optional Spicy Version:
- For a spicier dish, place a whole habanero pepper in the pan while cooking.
Agua de Chaya:
1- Blend Ingredients:
- Add the remaining chopped chaya leaves to a blender, followed by 1 liter of water.
- Blend until the chaya is fully pulverized and the mixture is uniform and green.
2- Strain and Serve:
- Strain the mixture through a fine-mesh sieve into a pitcher, pressing the pulp to extract all the juice.
- Discard the pulp or save it for other culinary uses. Serve the vibrant Agua de Chaya chilled.
