Ingredients
For the Flying Fish:
🐟 1 lb 450g Flying Fish fillets
🍋 2 limes for washing/marinating
🌿 1/4 to 1/2 cup Bajan Seasoning (brand with "77" logo)
🌶 1/2 medium Green bell pepper, chopped
🧅 1/2 medium Onion, chopped
🍅 2 medium Tomatoes, sliced
🛢 3 tablespoons Cooking oil
🌾 2 tablespoons All-purpose flour
🍛 2 tablespoons Curry powder
🍯 2 tablespoons Brown sugar
🍅 1/4 cup Ketchup
🟡 2 tablespoons Mustard
🌿 1/2 cup Okra, chopped
For the Breadfruit Cou Cou:
🍈 1 large or 2 medium Breadfruits, peeled and chopped
💧 Water, sufficient to cover ingredients for boiling
🧅 1/2 medium Onion, chopped
🧄 6 cloves Garlic, sliced
🌿 4 sprigs Fresh thyme
🥓 1/4 to 1/2 cup Salted pig tail or ham hock, chopped
🧂 Pinch of Salt
⚫ 1/2 teaspoon Black pepper
🧈 2 tablespoons Butter
Instructions
1- Preparing the Flying Fish:
- Clean and fillet the flying fish. Place in a bowl, squeezing lime over fillets and adding a sprinkle of salt.
- Coat the fish with Bajan seasoning, massaging thoroughly to ensure even coverage. Set aside to marinate.
2- Preparing the Breadfruit Cou Cou:
- In a large Cuisinart pot, combine water, onion, garlic, thyme, and salted pig tail or ham hock. Bring to a boil.
- Add chopped breadfruit to the pot. Boil until breadfruit becomes tender.
- Drain most of the liquid, reserving some for later use.
- Mash breadfruit directly in the pot using a potato masher, adding reserved liquid gradually for a smooth consistency.
- Incorporate black pepper and butter, mashing until smooth.
3- Preparing the Fish Sauce and Cooking the Fish:
- In a smaller pan, sauté green bell pepper and onion.
- Add tomatoes and pour in cooking oil.
- Sprinkle flour, curry powder, brown sugar, ketchup, and mustard over the sautéed vegetables.
- Stir well to create a sauce, then add marinated flying fish fillets into the pan.
- Cover and simmer until fish is tender, and sauce thickens. Stir occasionally for even cooking.
4- Serving:
- Plate the Breadfruit Cou Cou alongside the fish and its rich sauce. Optionally garnish with chopped okra.
