🐋 6 cups Cooked Beluga Maktaaq from raw beluga skin and blubber
🍶 2 cups White Vinegar generic, measured with a Pyrex measuring cup
💧 1 1/4 cups Water
🍬 3/4 cup Sugar White granulated, no specific brand
🧂 1 1/2 teaspoons Salt White granular, no specific brand
🌿 2 tablespoons Pickling Spice Pre-mixed blend, no specific brand

Instructions
1- Preparation of Maktaaq:
- Cut raw beluga maktaaq into large pieces using a traditional ulu knife on a cutting board.
- Boil the pieces in a red/white enamel pot for 1-2 minutes until tender. Use metal tongs with red handles for handling.
- Remove from heat, let the maktaaq cool, then cut into bite-sized pieces.
2- Prepare Pickling Liquid:
- In the same enamel pot, combine white vinegar, water, sugar, salt, and pickling spice.
- Boil the mixture for 10 minutes, using a wooden spoon to stir.
3- Jar the Maktaaq:
- Fill each Ball SureTight canning jar about 3/4 full with cooked bite-sized maktaaq pieces.
- Optionally, add diced onions.
- Pour the hot pickling liquid over the maktaaq until covered, leaving space for expansion.
- Seal the jars with lids and refrigerate for at least one day.
