Ingredients:
- 3 pounds russet potatoes (unpeeled and quartered)
- 1 small onion (finely minced)
- 3 cups fresh spinach (or kale)
- 1/2 head of green cabbage (chopped)
- 3 slices of bacon
- 1 cup heavy cream
- 1 teaspoon dried parsley
- 1/2 teaspoon dried basil
- 1/2 teaspoon black pepper
- Salt (for boiling water and to taste)
- 3 tablespoons unsalted butter (plus extra for serving)
Prep Time: 15 minutes
Cook Time: 50 minutes
Total Time: 1 hour 5 minutes
Servings: 6-8
Equipment: Cast iron pot, cast iron skillet, potato masher
Instructions:
1. Begin by filling your cast iron pot with water, seasoned generously with salt, and bringing it to a boil.
2. Carefully add the quartered russet potatoes to the boiling water.
3. In the meanwhile, mince your onion finely and prepare the fresh spinach or kale.
4. Once the potatoes have started to soften, add the chopped cabbage on top of the potatoes in the same pot.
5. Reduce the heat to medium and let the vegetables boil for a total of 50 minutes, covering with a lid. This also includes time to bring the water to an initial boil.
6. While the vegetables are cooking, slice the bacon into small pieces and fry them in your cast iron skillet over medium heat until crisp.
7. After 50 minutes, drain the pot. The potatoes and cabbage should have softened nicely.
8. Mash the vegetables directly in the pot and to the mash, add the cooked bacon, heavy cream, dried parsley, basil, black pepper, and the 3 tablespoons of butter. Mash until evenly mixed and creamy.
9. Create a well in the center of the Colcannon and add a knob of butter for presentation and flavor.
10. Serve hot and enjoy the comfort of this traditional Irish dish at any time of the year.
Cooking Tips:
- Adjust the consistency of the Colcannon with additional cream or butter if desired.
- Using a cast iron pot helps to maintain even heat and a steady boil, leading to perfectly cooked vegetables.
