Ingredients
For the Dough:
π₯£ 1500g 6 cups all-purpose flour
π¬ 200g sugar
π― 200g lard or substitute with melted butter
π₯ 2 whole eggs
π³ 3 egg yolks
π§ 1 teaspoon salt
π₯ 500ml Β½ liter milk
β¨ 10g 1 tablespoon Royal Baking Powder
π₯ 10g Β½ tablespoon baking soda optional
For the Filling:
π§ 450g cheese for grating preferably a semi-hard cheese like mozzarella
πΆοΈ A sprinkle of ground red pepper ajΓ molido colorado
π₯ 1 egg white for sealing
ποΈ 1 egg for egg wash
Instructions
1- Prepare the Dough:
- In a large mixing bowl, combine πΌ all-purpose flour, π¬ sugar, and β¨ Royal Baking Powder. Stir well to evenly distribute the dry ingredients.
- Add in the π― lard, π₯ whole eggs, π³ egg yolks, and π§ salt. Gradually pour in the π₯ milk while mixing until a dough begins to form.
- Knead the dough on a lightly floured surface until it is smooth and elastic. This should take about 10 minutes. Cover the dough with a damp cloth and let it rest for about 30 minutes.
2- Prepare the Filling:
- Grate the π§ cheese and set aside.
- Roll out the rested dough on a floured surface to about a ΒΌ-inch thickness. Cut it into strips approximately 10 inches long and 4 inches wide.
3- Assemble the Rolls:
- Place a generous amount of grated π§ cheese along one long edge of each dough strip. Sprinkle lightly with πΆοΈ ground red pepper for added flavor.
- Brush the opposite edge of the strip with π₯ egg white to help seal the dough.
- Carefully roll the dough strip, starting from the edge with the cheese, into a tight cylinder. Press the edges to ensure it is sealed.
4- Bake:
- Preheat the oven to 180Β°C 350Β°F. Line a baking sheet with parchment paper.
- Place the rolls onto the baking sheet, spacing them at least an inch apart.
