Ingredients
🌽 1/2 kilogram Maíz Frangollo (Cracked Corn)
💧 8 liters Water (7 liters for serving after reduction)
🌿 2-3 pieces Cinnamon Sticks
🌼 4 small Cloves
🍬 Sugar, to taste
Instructions
1- Preparation:
- Begin by thoroughly washing 1/2 kilogram of "maíz frangollo" in a plastic pot or bucket.
- Rinse multiple times until the water runs clear, and then drain using a colander.
2- Soaking:
- Put the cleaned corn into a pot and cover it with water.
- Allow the corn to soak for 12 to 16 hours.
- Extend the soaking time if you are in a cooler climate.
3- Cooking:
- After soaking, pour the corn and soaking water into a large cooking pot.
- Add cinnamon sticks and cloves.
4- Boiling:
- Bring the mixture to a boil over medium heat.
- Continuously stir to prevent sticking.
5- Simmering:
- Boil for 2.5 hours.
- Once the water level drops, add 1.5 liters of boiling water to maintain the liquid content.
6- Testing Doneness:
- After an additional 15 minutes on low heat, test the corn by mashing a few grains on a plate.
- They should easily form a puree.
7- Cooling and Refrigeration:
- Let the pot cool naturally for 1 hour.
- Transfer the beverage to a pitcher and refrigerate for 7 to 8 hours until chilled.
8- Serving:
- Sweeten with sugar according to taste before serving.
- This beverage is best enjoyed cold, with a mix of liquid and tender corn kernels in the glass.
