Dive into the flavors of the Mediterranean with this delightful dish, featuring tender octopus stewed with olives and tomatoes. Inspired by Chef Krenari from the show "Wake Up with MCN," this recipe brings vibrant flavors and aromas to your table, perfect for a summery dinner.
Ingredients
๐ 2 pounds octopus fresh or frozen
๐ซ 1/2 cup Kalamata olives
๐
1 cup cherry tomatoes, halved NatureSweet Cherubs
๐ง 3 cloves garlic, minced
๐ง
1 medium red onion, finely chopped
๐ 1 lemon preferably Meyer
๐ฟ 2 tablespoons fresh parsley, chopped
๐ซ 2 tablespoons extra virgin olive oil Colavita
๐พ 1 teaspoon dried oregano
๐ง Salt to taste
๐ถ๏ธ Crushed red pepper flakes optional
Instructions
1- Prepare the Octopus:
- If using frozen octopus, thaw it completely by placing it in the refrigerator overnight. Once thawed, rinse it under cold water and pat dry with a paper towel.
2- Tenderize the Octopus (if necessary):
- Some octopuses may need tenderizing. Consider gently simmering the octopus in a pot of boiling water with a lemon half for about 45โ60 minutes until tender. This step might vary depending on the octopus's origin and type.
3- Cook the Dish:
- In a large skillet or sautรฉ pan, heat the olive oil over medium heat using a Lodge Cast Iron Skillet, if available.
- Add the chopped onion and minced garlic to the pan, sautรฉing until they become translucent, around 5 minutes.
- Stir in the halved cherry tomatoes and cook until they begin to soften.
- Add the octopus to the pan and cook for about 5 minutes, allowing it to absorb the flavors.
- Stir in the olives and season with oregano and salt. If desired, add a pinch of red pepper flakes for a bit of heat.
- Remove from heat and add lemon juice. Sprinkle with fresh parsley before serving.
