3 Jitomates, fresh (Tomatoes)

π§ 2 Dientes de Ajo (Garlic cloves)

1/2 Cebolla, fresh (Onion)
π 1 1/2 cups Pepita de Calabaza (Chinchilla pumpkin seeds)
π 1 cup Jugo de Naranja Agria (Sour orange juice)
πΏ 2 ramilletes Cilantro (sprigs)

Instructions
1- Roast Vegetables:
- Preheat a comal (griddle) over medium heat.
- Place the jitomates, habanero chilies, garlic, and onion on the comal.
- Roast, turning occasionally, until the vegetables are charred and softened. The tomatoes should burst, and the garlic and onion should be nicely browned.
2- Blend Sauce:
- Transfer the roasted vegetables to a blender.
- Blend until the mixture is very smooth. Set aside.
3- Season Sauce:
- Pour the sauce into a small bowl, add salt, and stir to combine. Set aside.
4- Toast Pumpkin Seeds:
- Heat a frying pan over medium heat.
- Add the Chinchilla pumpkin seeds and toast them, shaking the pan frequently, until golden brown and slightly opened.
5- Process Pumpkin Seeds:
- In a food processor, grind the toasted seeds until they form a fine, even powder.
6- Combine Ingredients:
- In a clear glass bowl, combine the pumpkin seed powder with the blended sauce.
7- Add Sour Orange Juice:
- Gradually stir in the sour orange juice.
8- Mix Sikil Pak:
- Mix all ingredients with a spoon until a smooth, dip-like texture is achieved.
9- Final Seasoning and Garnish:
- Adjust seasoning with salt as needed.
- Finely chop the cilantro and sprinkle over the dip just before serving.
