Instructions:
1. PREPARATION: Begin by preheating your oven to 180°C (355°F). Wash and peel the potatoes. Slice them as uniformly thin as possible, using a knife or mandoline slicer for consistency. A tip for even cooking is to ensure all slices are roughly the same thickness.
2. LAYERING POTATOES: In your greased baking dish, start layering the potato slices, slightly overlapping each one. This not only looks neater but also allows the cream to seep through evenly. Continue until you've filled half of the dish.
3. BACON, ONION, AND GARLIC MIX: Meanwhile, heat a pan over medium-high heat. Without adding oil (the bacon will release its own fat), add the diced bacon, stirring occasionally, until it starts to crisp. Remove the bacon, leaving the rendered fat in the pan, and add the diced onion and minced garlic. Sauté until translucent and fragrant.
4. ASSEMBLY: Scatter the bacon, onion, and garlic mix evenly over the layered potatoes. Pour over half of your seasonally adjusted cream, sprinkle with salt, pepper, and mixed herbs.
5. FINAL LAYERING: Add the remaining potato slices on top, followed by the rest of the cream. Ensure the cream covers the potatoes, which prevents them from drying out in the oven.
6. BAKE: Cover the dish with foil and place it in the oven to bake for about 40 minutes. After this time, remove the foil, add a generous layer of grated cheese on top, and return to the oven to bake for another 20 minutes or until the top is golden and bubbly.
7. SERVE: Allow the potato bake to sit for a few minutes before serving. This will make it easier to cut and serve.
