Ingredients
🌮 1/2 kg Tortillas Taqueras
🐖 300 gr. Pierna de Cerdo Pork Leg
🥔 2 Papas Cocidas sin Piel en Cubitos Cooked Potatoes peeled diced
🧅 1/2 Cebolla Picada Chopped Onion
🥄 1 tablespoon Manteca de Cerdo Lard
🍅 500 gr. Tomate Verde Green Tomatoes/Tomatillos
🌿 1/2 manojo Cilantro 1/2 bunch
🌶️ 4 Chiles Serrano Serrano Peppers
🧄 Garlic cloves
💧 Water
🧂 Salt
Instructions
1- Prepare the Green Salsa:
- In a blender, combine 500 gr. green tomatoes, 1/2 bunch of cilantro, 4 serrano peppers, garlic cloves, and a splash of water.
- Blend until smooth and adjust with salt to taste.
2- Cook the Pork:
- Place 300 gr. pork leg into a pressure cooker with garlic and a chunk of onion.
- Cook for about 25 minutes after the valve begins to sound.
- Shred the cooked pork with two forks and season with salt to taste.
3- Prepare the Potatoes and Onion:
- Heat 1 tablespoon of lard in a frying pan.
- Sauté 1/2 chopped onion until translucent.
- Add the diced pre-cooked potatoes and sauté until heated through, then season with salt.
4- Prepare the Tortillas:
- Use a round cutter to cut tortillas into smaller circles if needed.
- Briefly fry each tortilla in the frying pan with lard until softened. Avoid making them crispy.
5- Assemble the Chalupas:
- On each softened tortilla, spread a layer of raw green salsa.
- Add a portion of shredded pork and top with sautéed potato and onion mixture.
- Optionally garnish with sliced jalapeños for added spice.
