Instructions
1- Desalt Olives (First Boil):
- Place the pitted green olives in a small saucepan with water.
- Boil on a Bosch AutoCook induction hob for 10 minutes to reduce saltiness.
2- Heat Fats:
- In a Bosch AutoCook multi-cooker or large pot, heat the oil and clarified butter until warm.
3- Sauté Onions:
- Add the chopped onions to the pot.
- Sauté until they become translucent using a blue silicone spatula.
4- Brown Chicken:
- Introduce the chicken drumsticks.
- Brown them on both sides until golden.
5- Deglaze & Add Garlic:
- Pour 1 tablespoon of water into the pot and scrape up any browned bits.
- Add crushed garlic using a small red spoon.
6- Add Spices:
- Season the dish with salt, pepper, ground cinnamon, and cinnamon stick.
- Mix well to coat the chicken evenly.
7- Add Carrots:
- Stir in the sliced carrots with gentle mixing.
8- Add Water & Cook:
- Pour enough water into the pot to cover the chicken and vegetables.
- Cover and let cook for 15 to 20 minutes on a medium setting until the chicken is fully cooked.
9- Desalt Olives (Second Boil):
- Drain the first boil's water from the olives.
- Add fresh water and boil them again for another 10 minutes.
10- Combine Olives & Parsley:
- Once the chicken is cooked, drain the olives and add them to the multi-cooker.
- Mix thoroughly with chopped parsley.
11- Thicken Sauce:
- Allow the mixture to cook for an additional 5 to 10 minutes.
- Adjust to desired sauce consistency.
12- Optional Chicken Browning:
- Remove chicken drumsticks.
- If desired, brown them further in an oven until the skin is crispy and golden.
13- Serve:
