Ingredients
🧄 4 cloves of garlic
🧂 Salt, to taste
🥚 1 egg yolk
🫒 115 ml extra virgin olive oil
🌻 60 ml sunflower oil
🍋 1 tablespoon lemon juice
Instructions
1- Prepare the Garlic:
- Peel the garlic cloves and finely chop them.
- Sprinkle a pinch of salt over the chopped garlic.
- Use the side of a knife to mash the garlic and salt together, creating a smooth puree.
2- Set Up Your Mixing Bowl:
- Transfer the mashed garlic into a large mixing bowl.
3- Begin Emulsifying:
- Add the egg yolk to the bowl with the garlic.
- With a hand mixer at hand, start blending the garlic-egg mixture on low speed.
4- Gradually Add Oils:
- Combine the olive oil and sunflower oil in a separate container.
- While continuously mixing, slowly add the oil blend into the garlic-egg mixture. Start with tiny increments, ensuring the mixture doesn’t split.
- As the sauce thickens, you can increase the rate at which you add the oil.
5- Finish the Aioli:
- Once you’ve added all the oil and the aioli has reached a thick consistency, stir in the lemon juice.
- Taste the aioli and adjust the salt, if necessary. You may add approximately half a teaspoon more if needed.
6- Serve:
- Transfer the aioli into a serving dish and enjoy it as a dipping sauce or condiment.
