Ingredients
For the Marinade:
πΆοΈ 3 guajillo peppers

1/2 onion
π§ 5 garlic cloves
π 2 bay leaves
πΏ 1/2 tsp coriander seeds
π° 1/2 tsp whole allspice
β« 1 tsp peppercorn
π§ Water (enough to cover ingredients)
For the Dressing:
π 1 can of sliced peaches, drained
πΆοΈ 3 chipotles in adobo
π― 2 tbsp brown sugar
πΊ 1 beer
π§ 1/2 tsp salt
β« 1/2 tsp black pepper
π½ 3 tbsp corn starch
π§ 3 tbsp cold water
For the Sandwich:
π 1 loaf of French bread
π§ Shredded Chihuahua cheese
π° Sliced red onion
π₯¬ Green leaf lettuce
Instructions
- Prepare the Marinade:
- In a pot, combine the guajillo peppers, onion, garlic, bay leaves, coriander seeds, allspice, peppercorns, and enough water to cover the ingredients.
- Cook over medium heat for 15 minutes.
- Blend the mixture until smooth.
- Pour the marinade over the sliced ham and let it marinate for 15 minutes.
- Preheat the broiler. Place the marinated ham on a greased sheet pan and broil until the edges are slightly charred.
- Make the Dressing:
- In a separate pot, combine the peaches, chipotles in adobo, brown sugar, beer, salt, and black pepper. Bring to a boil over high heat.
- Reduce the heat and let it simmer for 5 minutes.
- Blend the mixture until smooth.
- Mix corn starch with cold water, and add to the blended mixture. Stir continuously over low heat until the dressing thickens.
- Transfer to a squeeze bottle for easy application.
- Assemble the Sandwich:
- Preheat the broiler again.
- Slice the French bread loaf in half horizontally.
- Place shredded Chihuahua cheese on top of both halves. On one half, layer the broiled ham.
- Broil until cheese is melted.
- Remove from broiler and add dressing, sliced red onion, and green leaf lettuce.
- Cap with the other half of the bread, slice, and serve immediately.
