Ingredients
🐄 1 beef tongue (3-4 lb.)
💧 1 cup of water
🧂 Salt to taste (approximately 1 tbsp.)
🧄 6 garlic cloves
🧅 1 small onion
🌶️ 1 Anaheim pepper
🧉 1 tsp peppercorns
Instructions
Preparation: Begin by rinsing the beef tongue thoroughly under cold water to remove any impurities.
Setup: Place the beef tongue in the slow cooker.
Seasoning: Add the cup of water and sprinkle salt over the tongue for seasoning. Feel free to adjust the salt according to your taste preference.
Flavoring: Add the garlic cloves, whole onion (peeled but left whole), Anaheim pepper, and peppercorns to the slow cooker with the tongue.
Cooking: Set the slow cooker to low heat. Cook for 6 hours; if needed, you can extend cooking up to 8 hours. The long cooking time will ensure the tongue becomes tender and absorbs all the flavors.
Resting: After cooking, turn off the slow cooker and allow the tongue to cool slightly. This will make it easier to handle.
Peeling: Once cooled, carefully peel away the skin from the tongue. The skin should come off easily after the long cooking process.
Shredding: Using your fingers or a fork, shred the tongue into bite-sized pieces. The meat should be very tender.
Serving: Serve the shredded lengua in warm tortillas with diced onions, chopped cilantro, a squeeze of fresh lime juice, and your favorite salsa.
