Instructions:
1. In a large bowl, combine the mashed potatoes and cooked savoy cabbage. Season with salt and pepper, then thoroughly mix until everything is well combined.
2. Divide the mixture into two portions.
3. Preheat your frying pans on medium to high heat and add half a tablespoon of unsalted butter and half a tablespoon of vegetable oil to each pan. Allow the butter to melt fully.
4. Place half of the bubble and squeak mixture into each pan, pressing it down to create a flat surface.
5. Cook for about 5 to 7 minutes, or until the bottom is nicely browned and crispy. You'll hear the characteristic 'bubble and squeak' sounds as it cooks.
6. Roughen the top of the mixture with a fork, creating little peaks that will crisp up under the grill. Brush the tops with a little melted butter and oil.
7. Transfer the pans under the preheated grill and cook for an additional 4 to 5 minutes until the tops are golden brown and crisp. If you're not using an oven-proof pan, you can flip the bubble and squeak carefully and cook on the other side.
8. Once ready, serve with cooked bacon, a poached egg on top of each portion, and a sprinkling of fresh parsley for a burst of color and flavor.
Cooking Tips:
- If you don't have leftover cabbage, simply slice fresh savoy cabbage and microwave it for a couple of minutes until it's just softened.
- To avoid flipping, make sure you use a pan that’s grill-proof. If not, you can form individual patties and flip them in the frying pan instead.
- Brushing the bubble and squeak with butter and oil before grilling will enhance the crispiness and add a rich flavor.
