Traditionally, Sonso is grilled on skewers, but this recipe features an easy and delicious baked version suitable for any kitchen.
Ingredients
š„ 2 kg Cooked Yuca
š§ 250 grams Grated Cheese
š§ 250 grams Diced Cheese
š§ 1/2 cup Butter or Margarine
š§ Salt
š„ Up to 1/2 cup Milk PIL Andina
Instructions
1- Prepare Yuca:
- Wash and peel the yuca.
- Boil the yuca with a pinch of salt until very soft.
- Set aside to cool slightly.
2- Grate Yuca:
- Use the coarse side of a box grater.
- Grate the cooked yuca into a large mixing bowl.
3- Mix Ingredients:
- Add the butter or margarine to the grated yuca.
- Knead by hand until combined with the butter or margarine.
- Incorporate the grated cheese while continuing to knead.
- Season with salt.
4- Add Diced Cheese:
- Gently mix in the diced cheese.
- Ensure the pieces remain mostly intact.
5- Adjust Consistency:
- Add up to 1/2 cup of PIL Andina milk.
- Maintain a moist consistency for baking.
6- Prepare for Baking:
- Grease an aluminum foil baking tray.
- Transfer the yuca-cheese mixture into the tray.
- Spread evenly, pressing into a flat layer.
7- Top and Bake:
- Sprinkle additional grated cheese on top.
- Bake in a preheated oven at 180°C (350°F) for 30-45 minutes.
- Bake until golden and bubbly.
8- Pan-Fried Option:
- Form the mixture into patties for a crispy alternative.
- Cook in a lightly greased non-stick pan over medium-high heat.
- Fry until golden on both sides, about 5 minutes per side.
