Ingredients
🌶️ 2 chile poblanos
🌽 1 cup corn kernels
🥒 2 calabacitas (zucchini) diced
🌸 2 cups squash blossoms
🧀 Queso Botanero (Botanero cheese) as desired
🧈 1 cube butter
🍵 6 cups chicken broth Great Value from Walmart
🧅 1/3 sliced onion
🧄 1 tablespoon minced garlic
🧂 Salt
Instructions
1- Prepare the Chiles:
- Open the poblano chiles by cutting them to remove the stem.
- Carefully cut away the seeds, veins, and tip.
- Slice the cleaned chiles into strips, known as 'rajas.'
2- Prepare the Squash Blossoms:
- Remove the center of the squash blossoms.
- Chop them into large, noticeable pieces.
3- Sauté the Vegetables:
- In a black non-stick pot on a gas stovetop, melt 1 cube of butter.
- Use a wooden spatula to sauté the sliced onion and minced garlic for a couple of minutes until the onion becomes translucent.
- Add the corn kernels, poblano strips, and diced zucchini, continuing to sauté for about 5 minutes.
4- Combine Ingredients:
- Add the chopped squash blossoms and pour in the 6 cups of chicken broth.
- Stir the mixture gently.
5- Cook the Soup:
- Bring the soup to a boil.
- Reduce the heat to let it simmer for 7 to 10 minutes, allowing the flavors to marry together.
- Season the soup with salt.
6- Serve:
- Ladle the soup into a white ceramic serving bowl.
- Garnish with Botanero cheese, or substitute with your preferred white cheese, to add a creamy complement to the spicy broth.
- Serve the soup hot.
