Ingredients
🌽 500g fubá, cornmeal
🥓 200g bacon and calabresa sausage, diced
🐖 1 tablespoon pork lard
💧 1.5 cups water, added gradually
🧂 1 teaspoon salt
🌿 1/4 cup chopped green herbs, parsley and scallions
🧀 1/2 cup grated Canastra cheese, some reserved for garnish
Instructions
1- Prepare the Meats:
- Heat a small cast iron frying pan over a hot stove and add a little pork lard.
- Fry the diced bacon and calabresa until crispy and browned.
- Set aside for later use.
2- Cook the Fubá:
- In a large cast iron pot, such as a NEO pot, melt a tablespoon of pork lard over high heat.
- Stir in salt and add a small amount of water from a kettle to warm.
- Gradually add the fubá to the pot, stirring with a wooden spoon.
- Slowly incorporate more water, stirring continuously to “sweat” the fubá, cooking it until granular and crumbly, about 10-15 minutes.
3- Combine and Finish:
- Add the fried bacon and calabresa to the cooked fubá, mixing well.
- Incorporate the chopped green herbs and some of the grated Canastra cheese.
- Stir thoroughly to evenly distribute all the ingredients.
4- Serve:
- Transfer to a serving dish or serve directly from the pot.
- Garnish with extra Canastra cheese and herbs for a touch of freshness.
