Ingredients
š 2 fresh fish fillets
š 1 loaf of French baguette
š
3 Roma tomatoes diced
š§ 2 cloves garlic minced
š§ 1 teaspoon garlic powder
š 1 whole lemon squeezed for juice
š§ ½ teaspoon sea salt
šæ ½ teaspoon dried oregano
šæ ½ teaspoon dried basil
š¶ļø 1 teaspoon crushed red pepper flakes
š« 2 tablespoons extra virgin olive oil
šæ Fresh parsley chopped for garnish
š§ 2 tablespoons unsalted butter
š§ Salt and black pepper
Instructions
1- Prep the Fish:
- Season the fish fillets with sea salt, black pepper, and a light sprinkle of garlic powder.
- Heat a tablespoon of olive oil in a skillet over medium heat. Add the butter to the oil. When the butter is foaming, place the fillets in the skillet and cook for about 3-4 minutes on each side until the fish is opaque and flakes easily with a fork. Remove from heat and let it cool slightly.
2- Prepare the Bruschetta Topping:
- In a medium bowl, combine the diced Roma tomatoes, minced garlic, lemon juice, dried oregano, dried basil, crushed red pepper flakes, a pinch of salt, and a tablespoon of olive oil. Mix well and let the mixture sit for about 10 minutes to let the flavors combine.
3- Toast the Baguette:
- Preheat your oven to 375°F (190°C). Slice the baguette into ½-inch thick slices. Arrange them on a baking sheet and lightly brush each slice with olive oil. Toast in the oven for about 7-10 minutes until golden brown and crisp.
4- Assemble the Bruschetta:
- Once the baguette slices are ready, top each slice with a portion of the tomato mixture. Flake the cooked fish fillets into bite-sized pieces and place them on top of the tomato mixture.
5- Garnish and Serve:
- Garnish each bruschetta with freshly chopped parsley and a light drizzle of olive oil before serving. Enjoy your flavorsome Belizean-style Fish Fillet Bruschetta!
