Ingredients
🥚 3-4 organic or free-range eggs
🥔 1 large or 2 medium potatoes Bintje or Monalisa
🥖 1/2 traditional baguette Baguette Tradi from le boulanger
🌭 1 turkey sausage optional
🧀 Gruyère Cheese, grated
🌻 Sunflower Oil, for frying
🧂 Salt
🌶️ Black Pepper
For the Sauce:
🌶️ 1 red bell pepper
🍅 1 tomato
🧅 1/2 yellow onion, thinly sliced
🧄 1 garlic clove
🫒 2 tablespoons olive oil
🌿 2-3 sprigs of fresh cilantro
🥄 1/4 teaspoon cumin
🔥 1 teaspoon or more of harissa Brand: Le Phare du Cap Bon
🍋 1/2 lime, for juice
Instructions
1- Prepare the Sauce:
- Heat a stainless steel frying pan over medium heat with 2 tablespoons of olive oil.
- Add the turkey sausage, red bell pepper, tomato, sliced onion, and garlic. Brown the sausage for about 7-8 minutes, turning occasionally, then remove.
- Cook the vegetables for an additional 10-15 minutes until caramelized, stirring regularly.
- Deglaze with lime juice. Season with salt and pepper.
- Transfer vegetables to a KitchenAid electric chopper, add cilantro, cumin, and harissa. Blend into a chunky purée. Adjust seasoning and set aside.
2- Prepare the Fries:
- Peel and slice potatoes into 1-1.5 cm thick fries.
- First Fry (Blanching): Heat sunflower oil in a Lodge cast iron skillet to 150°C. Fry potatoes for 5-6 minutes until slightly cooked. Drain on paper towels.
- Second Fry (Crisping): Increase oil temperature to 180°C. Fry again for 2-4 minutes until golden. Drain on a cooling rack and season with salt immediately.
3- Prepare the Omelette:
- Whisk eggs with pepper in a small metal bowl.
- Heat a non-stick pan over medium-low heat. Arrange three-quarters of the fries in the pan and pour whisked eggs over them.
- Add sliced sausage over the mixture. Cook slowly until edges set.
- Fold omelette, optionally adding grated Gruyère. Flip to melt cheese.
- Remove from pan when cheese is gratinated.
4- Assemble the Sandwich:
- Slice and toast the baguette with olive oil in the non-stick pan.
- Spread sauce over the toasted bread.
- Place the frites-omelette onto the sauce. Add remaining fries on top.
- Close the sandwich, slice, and serve immediately.
