Ingredients
š½ 50 fresh white corn cobs
š¢ļø 1 liter Faro vegetable oil
š„ 250 ml cream (brand not visible)
š 2 kg sugar (varied quantities added, brand not visible)
šæ Ground cinnamon, adjusted (added from a red shaker, brand not visible)
š§ Water, added for blending
Instructions
1- Prepare Corn:
- Husk and clean the 50 corn cobs.
- Use a large knife to carefully cut the kernels from the cobs into a container.
2- Grind Corn:
- Portion the corn kernels into an Oster brand blender.
- Add a small amount of water to facilitate blending.
- Blend until the mixture is thick and somewhat fine.
3- Mix Ingredients:
- Transfer the blended corn to a large mixing basin.
- Repeat blending until all corn is processed.
- Add 1 liter of Faro vegetable oil and 250 ml of cream to the basin.
4- Add Sugar and Cinnamon:
- Sprinkle ground cinnamon to taste.
- Initially mix in approximately 1.5 kg of sugar.
5- Taste and Adjust:
- Mix thoroughly with a metal spoon/spatula.
- Taste the mixture.
- Add remaining sugar as desired to achieve a sweetness slightly above your preference.
6- Prepare Tamales:
- Place a spoonful of the corn mixture in the center of a clean corn husk.
- Fold the husk sides inward, roll into a cylindrical shape, and fold the bottom upward to seal.
7- Load and Steam:
- Arrange tamales vertically in a steamer pot with folded ends facing up.
- Lay empty corn cobs at the pot's base for support.
- Cover with additional husks and the lid.
- Ensure 5-6 liters of water is below the rack.
- Steam over a traditional wood fire or stovetop for 1 to 1.5 hours.
8- Serve:
- Carefully remove and serve warm, optionally drizzling cream over the top.
