Instructions
1- Prepare the Beef:
- Freeze the asiento beef for 30 minutes to firm it up for easier slicing.
- Remove from the freezer; on a clean cutting board, slice the beef into thin steaks (churrascos) against the grain.
- Tenderize the beef by gently pounding each steak using the flat side of a knife or bottle.
2- Cook the Meat and Cheese:
- Heat a large carbon steel frying pan over high heat.
- Add vegetable oil to the pan and a lightly crushed garlic clove to infuse flavor.
- Season the beef with salt and pepper, and quickly sear each steak until browned.
- Place 80g slices of queso mantecoso near or under each steak to melt and form a crust.
- Flip to lightly brown the cheese side and keep warm.
3- Prepare the Bread and Assemble:
- Halve the marraquetas and toast the inside surfaces in the pan to absorb meat and cheese juices.
- Remove the toasted bread; place the steak and cheese on the bottom halves.
- Top with remaining bread halves, press gently to combine.
- Serve immediately; slice in half if desired.
