Ingredients
🥩 8 lbs Pork shoulder, cleaned and cut into pieces
🌿 Island Vibe Haitian Seasoning, generous amount (Brand: Island Vibe)
🧂 1 tsp Salt
🌶️ Epis Haitian seasoning paste, generous amount (homemade)
🌰 2 tbsp Onion Powder (Brand: Badia)
🧄 2 tbsp Garlic Powder (Brand: Winn Dixie)
🍃 1 tbsp Ground Cloves (Brand: Badia)
🌶️ 2 tbsp Pure Ground Black Pepper (Brand: Great Value)
📦 1 package Sazón Seasoning with Saffron (Brand: Sazón Goya con Azafrán)
🥫 1 Maggi Cube, optional
🌿 Fresh Thyme, a few sprigs
🌿 Fresh Parsley, a bunch
🌶️ 1 whole Green Scotch Bonnet Pepper
🍊 2 tbsp Sour Orange Juice
💧 2 cups Water
🥄 Frying Oil, enough for deep frying
Instructions
1- Prepare the Pork:
- Place 8 lbs of cleaned and cubed pork shoulder into a large pot.
2- Season the Pork:
- Generously sprinkle Island Vibe Haitian Seasoning over the pork.
- Add epis, onion powder, garlic powder, ground cloves, and black pepper.
- Add the sazón seasoning packet.
- Optional: Crumble in one Maggi cube.
- Add fresh sprigs of thyme, fresh parsley, and the whole green scotch bonnet pepper.
- Pour in the sour orange juice. Mix all ingredients using a wooden spoon until the pork is well coated.
3- Marinate:
- Cover the pot and marinate the pork for 2-3 hours or preferably overnight in the refrigerator.
4- Cook the Pork:
- Place the pot on the stove over medium-high heat.
- Add 2 cups of water and cover the pot. Let the pork boil until tender and the water has mostly reduced to create a thick sauce.
5- Prepare for Frying:
- Once cooked, transfer the pork to a separate container to avoid oil splatter during frying.
6- Deep Fry the Pork:
- Heat the frying oil in a deep fryer to 375°F (190°C).
- Carefully place the cooked pork into the frying basket.
- Fry in batches for about 7-10 minutes until the pork is golden-brown and crispy.
7- Serve:
- Transfer the fried pork to a serving platter.
