Ingredients
🐟 1 kg Sea Bass, Butterflied
🍃 Banana Leaf (sufficient to line a baking tray)
📦 250g Achiote Paste, Annatto Paste
🍊 1 Orange, juice
🍋 1 Lime, juice
🧉 30-50 ml Vinegar, from shot glass
🌶️ Black Pepper, to taste
🌿 Oregano, to taste
🧂 Salt, to taste
🧅 1 Red Onion, sliced
🌶️ 1 Green Chili, Poblano-like pepper, sliced
For Vegetable Rice:
🍚 1 glass Rice, approximately 200-250 ml/grams
🫒 2-3 tablespoons Olive Oil
🧅 1/4 - 1/2 White Onion, finely diced
🧄 3-4 cloves Garlic, sliced
💧 2 glasses Water, twice the volume of rice
🌿 1/4 - 1/2 cup Peas
🥕 1/4 - 1/2 cup Diced Carrot
🧂 Salt, to taste
🌶️ Pepper, to taste
For Salsa Xnipec:
🧅 1 Red Onion, finely diced
🌶️ 1 Habanero Pepper, finely diced
🍋 1 Lime, juice
🍊 1 Orange, juice
🧂 Salt, to taste
🌿 Oregano, a pinch
For Serving:
🥑 Slices of Avocado
🌿 Fresh Cilantro Sprigs
Instructions
- Prepare Baking Tray:
- Line a baking tray with banana leaves.
- Prepare Fish:
- Place the butterflied sea bass onto the banana leaves.
- Sprinkle sea bass with salt and black pepper.
- Make Tikin Xic Marinade:
- In a bowl, mix achiote paste, orange juice, vinegar, black pepper, oregano, and salt.
- Blend until smooth and red.
- Marinate Fish:
- Coat the fish with the marinade.
- Preheat Oven:
- Decorate Fish:
- Add slices of red onion and green chili on top of the fish.
- Bake Fish:
- Bake fish in the preheated oven for 40 minutes.
Part 2: Preparing Vegetable Rice
- Sauté Aromatics:
- Heat olive oil in a pot on a Bosch induction hob.
- Add garlic and onion, sauté until golden.
- Toast Rice:
- Stir rice with sautéed aromatics for a minute.
- Season Rice:
- Add Liquids & Veggies:
- Add water, peas, and carrots.
- Cook Rice:
- Bring to boil, then simmer covered, for 20 minutes until cooked and fluffy.
Part 3: Preparing Salsa Xnipec
- Combine Ingredients:
- Mix red onion and habanero in a glass bowl.
- Add Liquids & Seasoning:
- Add lime juice, orange juice, salt, and oregano.
- Mix and Rest:
- Stir and let the salsa rest.
Part 4: Plating and Serving
- Plate Fish:
- Place cooked fish on a platter.
- Arrange Sides:
- Serve rice beside the fish, along with avocado slices.
- Garnish:
- Add fresh cilantro sprigs.
- Serve Salsa:
- Offer Salsa Xnipec on the side.
