Ingredients
🥣 250g white beans soaked overnight
🍅 3 ripe tomatoes or crushed tomatoes
🥒 1 celery stalk
🥕 1 carrot
🧅 1 onion
🧄 2 garlic cloves
💧 1L water
🌶️ 1 teaspoon paprika
🥄 1/2 teaspoon cumin
🌱 1/2 teaspoon ginger
🧂 1/2 teaspoon turmeric
🍅 1 tablespoon tomato paste
🧂 1 teaspoon coarse salt
🧂 Pinch of pepper
🌿 Small bunch of fresh coriander chopped
🫒 2 tablespoons olive oil
Instructions
1- Soak the Beans:
- The night before, soak 250g of white beans in water.
- The following day, drain and discard the soaking water.
2- Blanch the Tomatoes:
- Prick each tomato with a knife.
- Blanch them by placing them in boiling water for a few minutes, then transfer into cold water.
3- Prepare the Tomatoes:
- Peel the blanched tomatoes.
- Dice them finely.
4- Chop the Vegetables:
- Coarsely chop half an onion.
- Peel and chop the carrot.
- Chop the celery stalk.
5- Blend the Vegetables:
- Use a Krups Blender to blend the onion, carrot, celery, and garlic until finely minced.
6- Sauté the Vegetables:
- In a stainless steel pot, heat 2 tablespoons of olive oil over medium heat.
- Add the minced vegetable mixture and sauté until softened and fragrant.
7- Combine and Cook:
- Add diced tomatoes, tomato paste, drained white beans, and 1 liter of water to the pot.
- Stir to combine.
8- Season:
- Add coarse salt, paprika, cumin, ginger, turmeric, and a pinch of pepper.
- Stir well.
9- Simmer:
- Stir in the chopped fresh coriander.
- Cover the pot with a lid and let it simmer on low heat for 1 hour 30 minutes, stirring occasionally.
10- Serve:
- Once the stew is thick and the beans are tender, serve hot.
- Garnish with additional fresh coriander.
