Instructions
1- Prepare the Vegetables:
- Tear the button mushrooms into smaller pieces and place them in a mixing bowl.
- Remove the stem and seeds from the yellow pepper by gently pushing and pulling out the top section. Tear into small pieces and add to the bowl.
2- Create the Tomato Mixture:
- In a measuring jug, combine the chopped tomatoes with paprika, dried oregano, dry thyme, and grind black pepper about five times.
- Stir the tomato mixture thoroughly ensuring all spices are well incorporated.
3- Prepare the Feta Cheese:
- Use a knife to cut the feta cheese into smaller sections. Crumble by hand into fine pieces and toss with the vegetables in the bowl.
4- Assemble the Gyuveche:
- Arrange traditional Bulgarian pots on a baking tray.
- Spoon a layer of the seasoned chopped tomatoes into the bottom of each pot.
- Top the tomato layer with a generous amount of the mixed vegetables and crumbled feta.
5- Crack and Bake:
- Crack one whole egg on top of each pot's vegetable and cheese mixture.
- Place the baking tray in a preheated oven and bake until the eggs are perfectly set and tender, usually around 15-20 minutes at 180°C 356°F.
